Wash & rinse temperature

the problems that I have had in similar circumstances came from the water source to the unit (hot water line) did not have a high enough setting at the water heater thermostat. Another, the thermostat in the unit was not functioning properly, additionally, its important to make sure that the filters are cleaned daily, the lines checked to be sure there are no kinks in them that will cause pressure problems, and finally, be per manual, that your hoses are at the proper height for both drainage as well as feed.

Can you tell me what temperature the dishwashers reach during each part of cycle--Dishwasher model is WDF902SA Food authority have asked this of me

The wash temperature for a high temperature commercial dishwasher should be around 140F AND 160F. The final rinse temperature should be 180F to meet health code regulations. The final rinse temperature is reached during the end of the cycle for a few seconds. If the machine is a low temperature dishwasher the wash temperature and rinse temp will be around 140 F to 160 F. The sanitizing of your warewash will be done by the use of chlorine or iodine in the low temp application.

No sanitizer

If you have a 501HT you shouldn't need a sanitizer because the machine sanitizes using hot water. The final rinse temperature should reach 82 C to kill all germs. The chemical pump's element tubes may be worn out. This would prevent the detergent and rinse aid from being dispensed into the machine. If during the last 20 seconds of the cycle the machine doesn't reach the final rinse rinse temperauture, this may mean the heater coil will need to be replaced.

Not getting clothes clean

Try using less detergent and putting white vinegar in the rinse water. You can pour 1/4 C. or a little more into the automatic fabric softener dispenser for the final rinse, or put it in by hand.

Water temperature is not hot enough

the heater in the unit is supposed to heat both the wash water and the rinse water.
if it is not, then you have a problem in a controller or an element.
how are you determining the temperature and are you waiting for the unit to signal ready before you test it?
