If you have water coming out of the pipe on your roof, then the water pressure is set too high. Yes, you should adjust your ajax valve.
To do this, locate the adjustment screw either on the back or the top of the valve. Turn it counterclockwise to reduce the pressure. Watch the pressure gauge (does yours have a gauge on it?)
and wait after each turn for the pressure to settle before making another adjustment until you have the correct pressure.
If you don't have a gauge, turn the screw counterclockwise 1/4 turn, then you'll have to watch your pipe to see if it has stopped leaking water onto the roof. Don't turn too much at a time or you'll lose pressure at your taps. Turn the faucet on after each adjustment to check.

Chances are your supply line is leaking. One of three things (easy fixes).
1) There is a "packing nut" on the shut off which holds the handle on - this could be leaking (just tighten with pliers while open).
2) There is a nut directly above the shut off (3/8 inch) which goes directly to the faucet. Simply thighten this nut.
3) There is yet another nut above the last (very near the faucet). This is a 5/8 nut and you will most likely need a "crescent wrench" to tighten this as you cannot get pliers up there. You can purchase a crescent wrench at any hardware store for about 10 bucks. Good luck!
