How do you freeze summer squash and zuccini?
I blanch my veggies then drain them good, let them cool and zip baggie them, write the date on them, then freeze them, but with members of the squash family you can't do that because they will get mushy. Clean and cut them the way you like, spread them out on a sheet pan (single layer) and pat them dry (the dryer the better). Put them in the freezer. Once they are frozen, put them in zip baggies, put the date on it and the name of what it is and you are good to go. This is how I freeze onions and peppers too. To freeze eggs, I crack them into icecube trays, when they are frozen pop them out into zip bags, date and put the number of how many are in there. They will work great for baking, and scrambled, but the yolk will break when thawed. I freeze fresh herbs in icecube trays also. Just cut them and place them in trays with water and when you need basil or whatever herb you choose say for soup),just drop one in. Freezing and canning make life so much easier especially if you can't get to the store or things you need are out of season.
