Question about Hobart HEC501-240V Electric Oven

Electric Phases for Hobart Oven

I purchased a set of double stack Hobart CN90 ovens. They are currently wired for 3 phase. My question is can it be wired for single phase if it states "phase 1-3" on the back panel? I am assuming this means they can go either way. Both ovens are 208AC, 230V, 60HZ. I would like to put these in my commercial kitchen which is in a residential home which 3 phase service is unavailable.

You must understand this : your electric oven must be indicate if it is a single phase( use 3 wires for 230 2 hot wires + 1 Neutral see the diagram like dryer? you must sure about this. Normally any appliance for home are single phase NOT 3 phase.

2) If you electric oven, say 3 PHASES( use 4 WIRES, 3 hot wires+1 Neutral wires) this for industrial application +comercial Electric Phases for Hobart Oven - 270266c5-a0ad-44dc-9f40-e963255d47f5.jpgNOT for home

However if you system is 3 phase you must need to install 3phase transformer.

SOURCE: Need to change oven from 440 3 phase to 220 single

It can be done with a transformer, 480/ 240 single phase transformer to get the lower voltage. Then the oven will require some wiring changes to get all the elements and controls connected to two hot wires instead of three. The transformed will be sized to the wattage rating of the oven. This is a only basic description of what needs to take place.

Have you tried shutting down all power to your oven at the electrical panel, waiting 10 minutes and then returning power to the unit? Procedure could reset the defaults. Best of luck.

Looks like our church just received the Vulcan VC4ED convection oven - 208 volts 60 amp. We have the 60 amp breaker but what gauge wire from the breaker to the oven do you recommend? I have to run about 35...

use 3 -- 6 gauge copper wires, you could get by with 2--6 gauge wires for the two hot phases and 1--8 gauge for the neutral connection, but with that long a run use all 6 gauge so you don't experience any voltage drop, also in your community you may need to check the local codes on grounding and need to add a separate grounding wire, which you can use an 8 gauge for this wire connection, if you use aluminum wire(which I highly DO NOT reccomend) you will need to get one gauge larger as in 3--4 gauge aluminum to carry the same current as copper wire

Remove the lower panel under the doors. You should find the data plate on the back of the panel. What country are you in?.

My single glasstop oven

Will try to help here.. First off.. when you measure 120VAC at each terminal for the heating elements..what are you using as a reference? Ground? Since your stove is probably wired 220VAC, I would expect to see something across the two terminals to the element that isn't line voltage.. meaning, when you turn the controller to a setting, you should see something more than 120VAC across the terminals and the current will be controlled to maintain a heat setting. The burner that has an open element is indendent so that should not factor in. Heating elements are nothing more than a big resistor that generate heat when current flows thru them. Just because you have one leg of power doesn't mean you have current flow thru it and therefore that is where I think your problem is... You may have an open leg ..Check the power coming into the oven and make sure you have 220VAC across the two line voltage terminals.. Be careful ( very careful ) when doing this...
Hope this helps.

Proper Gaggenau EB294 Oven Terminal Block to Cable Harness wiring

If its brand new, most possibly the electrician did not bridge the mains connection.
It sounds like an installation fault.

There is usually a jumper between 1-2-3 on the L connection on the mains, and a jumper between 4-5 on the N connection.
