The VCR may need a head cleaning. All it takes is a little oxide from a worn tape to clog up the heads and cause the trouble. You can try a head cleaning cassette (if you can still find one), but it's better to open the case and clean the entire tape path with the proper cleaning fluid and swabs. You used to be able to buy all the supplies and instructions in a kit at Radio Shack and other stores. If you can't find what you need locally, there are certainly online sources.

For other type of video camera tapes you will have to try other methods like connect camera with tape to a DVD recorder and directly burn the DVDs. You can buy attachments and software for PC but I have found these very cumbersome to work with.
I don't recognize your first problem. The "light to dark" issue I believe is intentionally engineered (mine does it too); it prevents recording DVDs on to tape. Try running the DVD player directly to the TV. Radio Shack used to have a box that would correct this issue too, you might check there.
I just got done recording a vhs to dvd and it worked great. Also you can print the manual at manualsonline.com or something like that.. google it, i printed mine. I had to watch the enitre vhs to record it. As you are playing the vhs (right at the beginning) push the blue D. Dubbing button then when its done playing push stop on the DVD side it will say writing to disk on the bottom once thats done ooha la!! I am trying to figure out if there is a way to dub a vhs to dvd without having to watch the howl movie but unfortunatley I don't think there is!

It sounds like possibly there is stray RF getting into your video signal from your DVD/VCR combo to your tv. Check that your cables are ok, but also, if you can, try moving the unit in relation to the tv, if it is underneath, try putting it on top or beside the tv, I've seen the effect you describe be cause by lack of sheilding in both the tv and DVD/VCR, and moving the unit could cure it.
