i believe you want / need to change your Apple ID and PW.

If your apps were from the apple AppStore they should be in the cloud and you should be able to retrieve them on your new Apple device as long as you know your Apple ID and password along with your iCloud password

It was supposed to be the email used to setup your Apple ID

You would have to contact apple support if you forgot your ID too...
Im not sure what even they could do...
Try to find your apple id, than you could answer some security questions to recover your pass...

This needs to be reset by the Apple ID that first setup the Ipad. If you don't have that - you can take the Ipad to an Apple Authorized Service Center - along WITH a receipt or proof that you own the Ipad - and they can reset the device for you.

To reset the iPad, (iPod, iPhone) press the home button and the on / off button and hold both, till the apple logo appears on the screen. Then release both buttons. It will take about half a minute, till the start screen appears again.
If your iPad has iOS 7 and there is a lock screen asking for the password for an Apple ID, shown only partially don't bother resetting the iPad,because this question will com back whatever you try or whatever you do. Till now nobody has cracked that one. You need the password from the former owner. Read my other post about unlocking iPxxx.

You may need to pair the bluetooth again as it may have lost its pairing id sync.

Delete the pairing if it exists and start from the beginning.
