How do you calibrate a commercial restaurant gas flattop grill? The center reaches 550 degrees but the sides only reach 250 degrees

What temperature should my Weber 8006 heat up to ?


That, my friend depends on what flame height the burners are set on and how long the lid is closed. If left long enough, I suppose it could reach 550 to 600 degrees. Which is more than what's necessary to seer a steak. Why do you ask? Having a problem with the grill not heating well?

I have a natural gas hookup and my grill takes a long time to heaat up (15 minutes) and max degrees is 350 - 375. I found dust in the connection hose blew ut out. Also took grill apart and cleaned...


Unfortunately, that's the way it does on Natural Gas, in an outdoor environment. The reason being, Propane Gas burns cleaner and hotter than Natural Gas in an outdoor environment. Of course, on the plus side, you don't have to get tanks refilled. With that said, the thermometer on the grill may be faulty.

To test this theory, buy an inexpensive oven thermometer (the kind that can be placed on an oven rack) and place inside the grill, when you're preheating it with the lid closed. Once you grill thermometer reaches 350 degrees, open the grill hood and compare it the two temperature readings. If the oven thermometer is reading significantly higher, then you no the grill thermometer is faulty.

Oven shuts down before reaching correct temperature


You will need to check the oven calibration using a thermocouple based thermometer(the one you stick in the oven is not reliable). Electric ovens should keep a near constant tempature so if you have it set to 350 the oven should stay around 350 once temp is reached. Now gas ovens are a little different. Most use a on/off thermostat and that means the temp can vary from 320 degrees to 370 degrees to keep an average tempature of 350. So if it is a gas oven you will need to let it warm-up for 10 minutes then start taking the lowest and highest 5 consectutive readings. Then add the 5 reads together and then divide the number by 5 and it should be within 10 degrees of the set tempature. If it is off by more than 50 degrees then you might not be able to get it back to proper calibration. The calibration methods are different for each range and depend on the type of thermostat you have digital(push button controls) or manual(knob). The owner's manual for your range might contain the instructions or consult the manufacture's website for the instructions.

PROBLEM

CHECK
The excess flow safety device,
which is part of the barbecue to
cylinder connection, may have
activated.

CURE
To reset the excess flow safety
device turn all burner control knobs
and the cylinder valve OFF.
Disconnect the regulator from the
cylinder. Turn burner control knobs to
HIGH. Wait at least 1 minute. Turn
burner control knobs OFF. Reconnect
the regulator to the cylinder. Turn
cylinder valve on slowly. Refer to
“Lighting Instructions”.

Smoker will not reach heat of 250 to 300 to effectively smoke meat


I have heard that the "new" propane tanks have a saftey valve that closes if they are opened too quickly, try opening the valve very slowly. When you say it has been cleaned that means you have checked the venturi and the burner for spiders?

Mike, I had this problem with my grill once or twice. Like most of us grilling men we turn the grill off at the tank trying to be safe. Sometimes, like in my case, I do not turn the nobs back to the off position. When returning to the grill the next day or week the first thing we do is turn the gas on leaving the nobs on, then lighting. Every time I do this my flame never gets full or does not reach full temp. To resolve this: turn everything off including the nobs, then turn the gas on, wait a minute or two. Turn the nobs to full and ignite. It should be at full flame then, adjust from there. I hope this is helpfull.
