Rim-shaped plates originated in Europe. In the West, food portions are cut into bite-size pieces at the table, and the rim-shaped plate is made with a well that collects the juices that flow from the food.
Coupe-shaped plates have no rim and accommodate the way food is cooked and served in the East. In the East food is cut into bite-size pieces in the kitchen and cooked quickly over high heat.
To allow space for the courses on one plate, the diameter of the coupe-shaped dinner plate is approximately 1 inch larger than that of the rim-shaped dinner plate.

Sounds like you are suffering from good old wear and tear. It might be possible, if you are willing to invest the time and effort, to re-make the worn parts. I would suggest that if you decide to try this, you use a hardenable steel, like W2, O1 or even 1095. Shape the parts a bit oversize and drill any required holes. Then file to the correct size - take it SLOW. Then harden the parts, by heat treating them. You can find steel by researching knife maker or knifemaker supplies websites. Also a good source for instructions on heat treating the steel as different steels are heat treated differently, some quenched in water or brine, some in oil. be sure to drill any holes before heat treat as you won't be able to do so afterward. You will need a grinder or belt sander for shaping after heat treat as well.

Doel fin made 2 different designs, first came the one piece design with a clear slot where the lower unit went and it bolted thru the cavitation plate.
The second was a 2 piece which fit on both sides of the cavitation plate.
Both were shaped like a wing- flat on the bottom and arched across the top.

The ink cartridge are of different type and contains ink in different form.

Please follow these very easy steps and this should help you
Instructions Things You'll Need:

  1. Step 1 Find the tube that feeds the burner. There's a burner air adjustment on it that mixes the air and gas.
  2. Step 2 Look to see what type of burner air adjustment you have: It will either be a barrel-shaped chamber or triangle-shaped with a cover plate.
  3. Step 3 Loosen the air-shutter screw on the barrel-shaped type. This screw is on the end of the barrel closest to the burner.
  4. Step 4 Open the shutter on the barrel-shaped type by turning it counterclockwise; close it by turning it clockwise. Opening it will add more air, which will make the flame higher; closing it will reduce the air in the mix and lower the flame.
  5. Step 5 Loosen the screw holding the plate on the triangle-shaped burner air adjustment. Don't remove the screw - it just needs to be loose enough to move the plate.
  6. Step 6 Move the plate so that the opening is either more open or more closed. More open will make the flame higher whereas more closed will lower the flame.
