From the video it appears many things could be wrong. The baffles and burner tubes could be clogged, the burner itself can be clogged, the flue is blocked, or this unit is using the wrong type of gas, ie: propane on a natural gas fryer.
Recommended steps for troubleshooting.
1. Verify proper gas type. Natural or Propane.
2. Check Burners, tubes, and baffles, clean all soot and debris from them.
3. Check for and remove any obstructions from the flue.

Hi there. The burners need cleaning, soot have already build up inside the burner stem and holes. Most probably, it it caused by leak on gas valve's main valve; small flames are visible on burner orifice tip even with thermostat is "off" (assuming that the unit is connected to a correct gas source). Fire tubes need to be checked for soot formation, clean as needed. Regards.

Imperial fryer IFS-40

I had a very simular problem. My fryer would do exactly as you described, but sometimes the pilot light would stay on until the burners tried to re-ignite and then it would go out.
I finally had to call the gas company. They took the pilot light apart and cleaned it. The fryer works perfect now.
Hope this helps!
