Is it advised to attach the rack to the wall?

In most cases it is preferred to do so to avoid any unnecessary pressure on the wooden frame and it is always better to be safe than sorry. The only time I'll tell you not to attach it to the wall is when the wine rack is lower than 45 centimeters.

I want to get a simple wooden kitchen cart but it has to be heat resistant

You need to consider that when you put a hot dish on a wooden top, whether it's a table or a cart, you will need to put a trivet underneath. Wood is not very heat resistant - hot dishes may leave some mark on the wood if you're not careful.

How heavy is a wooden kitchen cart with only shelves and no doors

It really depend on few factors: what type of wood is it, how thick are the shelves and legs, does it have wheels or not. However, when considering a simple wooden kitchen cart, I estimate it about 80-90 pounds.

Is there a difference preserving the wine in metal or wooden rack?

Terracotta winestones are less affected by temperature changes and are the best choice for wine in your living room , but not to place in a sunny side of the room in a place where its more outside influence sunlight.

Water seeping out the bottom of my wine cooler

there should be a drain pan that you will periodically remove. Condensate (water) is a normal byproduct of all refrigeration devices. Also look for a drain fitting that you can run to a waste line.
