Question about Kitchen Ranges

Welcome to the world of Viking. This is a reasonably straight forward fix if you've gone through he headache before. Right, here is a step by step explanation which will get it resolved.
The problem is with one or more of your glow plugs. your oven has 2 one for esch side, one of your glow plugs in the oven is not working hence the limited heat.
There are 3 glow plugs (one for each of 2 oven burners and one for the broiler).
2. Once the glow plugs are glowing strong they pass 3.2 to 3.6 amps of current to the "dual bake gas valve" or "single broil gas valve" (there are 2 gas valves [one dual for oven, one single for broiler]). The gas valves are bimetal types which release gas once the glow plugs are glowing.
3. The gas valves release gas for ignition and the glow plugs turn off.
I would suggest that your glow plug needs replacing (unless for some reason a wire is broken), Check for continuity, etc.
I would strongly suggest changing all 3, becuase if one is faulty you can bet your botton dollar not long time down the line the others will too.

WHAT IS WRONG WITH YOUR RANGE / STOVE / OVEN?
The burners of a range/oven are the heating units that you cook things on. We call the top area where the burners are the "range." Some people call it the "cooktop," others simply say the "top of the stove."
In a gas oven, the broiler is located either inside the oven, or beneath the oven in a drawer. If the broiler is inside the oven, the top metal rack of the oven serves as the broiler rack or shelf.

If the over is not getting as hot as it should be, it sounds to me like you have a thermostat or heat regulator problem.
