I would check the manifold for mineral build up. this could be the issue for the unstable water flow.

Long time not using the ice maker, today I tried an is making ice

I would replace the water filter first off. If you have completed that already then I would check the water fill outlet for calcium build up. If that is clear, check to make sure the solenoid is energizing for the fill. If you have water to the basin and it is still not working I would have to check the timer to see if it is initiating a cycle for the ice.

THe ice /water dispensor is throwing out ice and water independent of contact from a glass hitting the dispense level, to have it dispence. As a result we have turned of the water and ice control but now...

This is a general answer. The water dispenser paddle makes a switch that then opens a water solenoid valve that dispenses the water. The ice paddle makes a switch that starts an auger in the ice bin to push the ice out. There is either a rod across the bin to detect the height of the ice in the bin or a thermostat that hangs a little way down in the bin. These will open a water valve to fill the evaporator to make more ice if they think the bin is low. Mineral buildup in the water valves is fairly common and can keep them from completely closing. I don't know which light your referring to, but the low ice light should go off when the bin hills. Also, small inline water filters are available in most hardware store to filter water for refrigerator use. I hope this helps.

Ice full when no ice portable ice maker

There is some sort of arm that fits into the ice tray; when the ice fills up the tray the arm is pushed up and a switch connected to it will open the circuit and prevent any future ice maker operation(s). That switch has to be closed for unit to work!

We have a commerical manitiwoc ice machine that after the bin fills up it cuts off and has to be reset. After resetting it fills up again and a blinking light comes on telling me that something is wrong....

Manitowac uses a plastic deflector which has a magnet located on the bottom. When the machine drops the ice the deflector opens breaking the circuit to the bin switch. This would indicate "Bin Full" condition. As the ice is used the deflector closes and the magnet comes in touch with the bin switch.
Most likely the bin switch needs replacement.

Keeps making ice and fills up bin. I checked the bin thermostat and it is plugged in and does show some resistance. House is not too cold but is about 65-68 deg.

Usually the system continues It's operation when the thermostat is defective,Replace thermostat and check the operation of the system.

Hoshizaki ice maker am-50bae . Made ice regularily--- filled ice bin half way...next day-- all ice melted away with no more new ice? next day shut off for 3 hours now o new ice.

make a few quick checks. If there are water filters on the system, be sure they are not restricked. Could be clogged. Next, check the bin stat. It usually is mounted in the ice bin. If it breaks or goes bad, it shuts down the machine. Start there and let me know if I can be of any further help.

Kenmore freezer not making ice

Pour about 1/2 cup of water into icemaker ( unless ice is already there ) . If the icemaker dumps the cubes , then the water valve is bad . If it doesn't dump , and holds the frozen cubes , replace the icemaker . Also check your coils to make sure they are clean from dust , lint , etc . Check the fill tube going to the icemaker , to make sure it isn't frozen with ice . If it is , then watervalve is still bad (leaking ) .

Bin control

The bin control shuts it off when the ice bin is full. Without a bin control it should keep making ice and never stop.

No ice saved

If it's makes a good slab of ice the only reason it would melt would be a drain blockage holding water in the bottom of the unit or the water pan overflowing into the bin when it fills up. If you check the slab when it falls on the cutter and see a hollow looking spot in the middle you may have an evapoator leak. Yhis would require a service tech to repair.
