You sure can!
You may incur some minor physical damage to your ipod (like the case) but other than that it should be fine as long as your willing to open up your ipod! I replaced my ipod video with no problems, only a few dents in the plastic case, but since ipod mini is metal, you should have less damage to the case while prying it open, and i believe you open it by unscrewing some screws anyway...
