Are there more recipes for my Crofton bread maker. I'm afraid that I haven't had a lot of good success with it recently. I have used Wrights complete bread mixes, they always dip in the middle

Instead of looking for more recipes for your Crofton bread maker, or any other bread maker, I looked for information as to why the bread made with a bread maker would collapse on top.

The answers I found on this online baking formum:
may prove instructive.

To summarize, some of the causes and remedies for bread maker bread collapsing on top:
- You may reside at a high altitude and have not adjusted the recipe so that it does not over-proof [over-rise]. Cut down on the yeast, sugar, and salt.
- Even if you are not at a high altitude, try a recipe with reduced amounts of yeast, sugar, and salt (try reducing the amounts by 1/4 to 1/3)
- Use the dough mix cycle; Then turn the machine off and let the dough rise a little less than the recipe calls for; When you see the dough has risen turn the machine on to bake.
- If your bread maker allows,.reduce the amount of time between rise and bake

I did find a PDF document (Adobe Reader software - free) for a model of a Crofton Breadmaker, model MD 8505. In case you do not have a manual for your machine. The manual I found has information on how to make adjustments for altitude (page 22) and other adjustments to make (pages 23 - 24), including what may cause the loaf to fall while baking. Follow a recipe similar to that for Dinner Rolls on Page 19 where you would use the Dough Setting to allow the dough to be removed for shaping and baking in your regular oven.

Every time I make a loaf of bread it overflows the pan and pushes the lid up. I have followed the recipe in the book that came with the machine. What am i doing wrong?

You're using a fast-acting type of yeast instead of the standard active dry yeast. It's a very common mistake made even more common by the erroneous bread machine recipe writers.

Here are the rules concerning bread machines and the yeasts they love the most:

Use standard active dry yeast for all your standard-rise bread recipes.

For the fast-bake white bread recipes use only fast-acting dry yeast.

Fast-bake type mode selections are available on most newer models and the custom recipes provided in their instruction manuals are the only ones you should use. You should never experiment with recipe ingredients and their portions when using the fast-bake mode on any breadmaker.

P.S. Always refrigerate your yeast with a close eye on the expiration date.

When using grocery-bought bread mixes always substitute the yeast packet provided with fresh active dry yeast. Tip: A packet (or "sachet") of standard active dry yeast contains 2-1/4 teaspoons.

What is the sequence for placing the bread ingredients in the baking container of the bread machine.

How To Make Bread (without a bread machine)
Step 1 What you'll need
You will need: Yeast - 2 Tbsp Hot-ish* water - 2 cups Bread flour - 5 cups total, 2 for the sponge and 3 for later. (NOT regular flour) Sugar - 2 Tbsp. Salt - 2 tsp. Oil - 2 Tbsp. 3 loaf pans Quick-read thermometer Oven pre-heated to 375 *Hot-ish means betw…

let the dough rise in a warm place for about 45 minutes to an hour. the dough should be about doubled in size by the time it's finished.
Step 5. Into the pans
Punch the dough down (Yes, punch it. Beat the heck out of it. Just don't make a mess), then divide it into 3 parts. Spray the pans and put the dough in. Let it rise again in the pans (covered) util it looks like the second picture.
Step 6. Into the oven
Preheat your oven to 375 F and put the loaves in. Bake them for about 25 minutes. Your quick read thermometer should read between 180 and 190 degrees. Pull the loaves out and place them on their sides on a rack, after a few seconds slide them out of the pans and onto the rack. Let them cool.Step 7 Eat!
Eat it! Share it! etc.! You can do a lot with this recipe... ...You can add nuts, roll it out and add cinnamon and raisins for cinnamon-swirl bread, add your favorite spices, etc. Add sweet potatoes, chunks of cheese, pieces of ham, or whatever suites you.

Bread settles down wile baking.

Bread deflating or baking sunken in with a crater ridge around the top usually means too much liquid or sugar.  Try the same recipe by reducing the liquid by 2 tablespoons.  If dough appears like pie crust dough, add teaspoon of liquid down the side of the dough and observe. Add another if necessary.  Humidity and temperature affect the dough and its behavior  Do not dispair if a recipe that has been tried and true suddenly does not "work."

Yes, there is a recipe book. It's called Easy Baking by Tom Lacalamita. But you can use other recipe books, too. The only thing you need to know is that for this machine, is the yeast goes in first and the liquid goes in last. If there is a specific recipe you are still looking for, I can try to share it.
