I have used some of these applications for a couple of months. But, starting last week, all applications open for 1-2 seconds, then it reverts to the main menu. I cannot open them at all, & some have important info I need. Help.

I had exactly the same problem, you have to sync them on itunes. Plug in your itouch, open itunes and make sure it is the version with an applications section in the libary. Then click on your itouch in Devices go to the end applications tab and you have to sync them. This worked for me.
