Check to make sure the av cable is switched to hdtv, and if that doesn't work, then try adjusting the video setting in the dashboard as maybe you have it set to a low resolution. If that doesn't work then you are probably having a hardware related problem like e74 or 0102 on its way. also make sure you are using the right cables in the first place since you stated you got a new plug, i assume that means av cable.

Is your TV HD supported becoz if not, your AV cable may be trying to get HD TV becoz there is a switch on the bit where it connects into the 360 console try switching it to the other side then turn it off then back on hope this helps :)
Try booting the PS3 with the hard drive removed from the drive bay ( on the side) you just remove the small plastic piece hidding it and remove one screw. It's easy. Let me know what happens. Also make sure you also plug in the original red white n yellow cables too to check if it's just an hdmi issue or system wide.
i have my picture going through the hdmi and the sound going through the scart. plug the scart into the back of the ps3. then the white and red wire are into my tecnics sound system and it works perfectly you just need to set it up in the sound options in your ps3. which is very easy. just select scart in the sound options. hope this helps you.
