Question about Garland H283 Gas Kitchen Range
Will a universal thermocouple (like for water heater or furnace) work?
this is a dual oven unit and the part i need is located under the cover at the bottom of the oven.
Yes, I just grabbed a standard 18" thermocouple at ACE ($8.50) and installed it. Works just fine.

Hello. To answer, yes a universal will work, however, it may not last as long as the OEM part, as the original may be constructed slightly different to hold up against the heat better, and other environmental factors not encountered by a water heater, furnace, standard home range. So as a servicer, I would suggest the original part first, then a universal, to get you by.
