This may be his invention (or perversion) of a defrost timer that makes defrosting automatic.
The timers are ~$35-50 US and if located as most are, under the unit, behind the grill and in the front, it is not that tough to replace.
May I suggest you log onto the Better Business Bureau website if you are in the US and check their membership for a trustworthy service company. This outfit does not sound like they will be found on the BBB list.

Front heater and defroster not working. Backwindow defroster is working. It works for an hour or so on rare occations and that happens when it is warmer outside and when engine is actually in use with...

The back window defroster turns off, when it gets to hot (about an hour or so). Unless there is an electric windshield heater, all there is, is the warm air for the front heater. If the car is run on low rpm or mostly downhill, there will be not much warm air being produced since the engine does not warm up.
Another possibility is, that the thermostat for the circulation of the radiator cooling fluid does not open, either because the engine is cold or, in case the engine is warm (if the stopped engine, right after driving the car for 5 minutes, can be touched without getting burned, the engine is not getting warm), the thermostat is not working properly, or the car is low on radiator coolant liquid.

My 1991 honda accord is a stick shift and when i'm driving sometimes it sounds like something is grinding and a repair tech at AAMCO told me i needed a new slave cylinder. does this sound correct

well i hope he is.. cause there are many thing that will cause that, for example the grinding noise from the transmission is a broken gear in the Gear box. (transmission).. The only way to be sure is to actually observe it our selves which we cant. In this case i would advise you trust the tech and if needed get a second opinion. However if you can answer these question we should be able to help.

is there any other sounds or vibrations while driving ??
where is the sound coming from ?? (what part of the car like left side front wheel)..

does the rims get hot ??
is there a clacking sound while turning left or right hard.
is the noise constant and increases with speed ? (if its this one chances are its a wheel bearing)

Kenmore fridge leaks water on floor and then stops cooling. Tech said it needed heater/defroster and would cost $500. Does this sound right.

Ah no. If the fridge was not defrosting then water would not be leaking out.
It sounds like the defrost timer is not completing it's cycle. You may need a new defrost timer.
The cost of a new timer, call out, fitting and testing could be around $375

The bottom shelves of my freezer are not working, its not freezing the food.

Possible that the compressor is not having the needed pumping pressure. So check if there is frosting within the freezer , a clear case of auto defrost not working. If so shut down for 6 hours and start, if cooling returns to tray then check on the auto defroster timer, the thermostat or the heater. If there is no cooling still the compressor or the gas pressure is down. Fill after confirming there is no leak.

99 Pontiac Montana Heater Hose assembly

What was the problem that you took the vehicle in for? Was it leaking?

Just like doctors, if you don't trust your mechanic move on and find one you trust. I often would be given a list of things that my customer was told they needed after getting tires (I didn't do tires back then) and Often none or maybe one thing on the list was really wrong. You have to be careful.

FREEZER ICED OVER, LOWER COMPARTMENT NOT COOLING

Well, if the service person said the defroster is not the problem, there must be a good reason. But, I would go with a faulty defrosting system. Most likely suspects are the defrost timer and the defrost heating element.
