Your phone still locked only for T-mobile network, that's why you got error message when you change your sim card. You must unlock your blackberry using blackberry curve 8310 unlock code for T-mobile network. Blackberry unlock code can be obtained from your network provider in this case T-mobile or you can buy from third party sites. Both of them will take you some charge but third party sites have lower cost and quick delivery service rather than network provider.

To make and receive calls the procedure is same in Blackberry,
You can send and receive messages and click on ALT key to change the letter case from numbers to Letters,
You can use the functions using the Blackberry Menu key and the Track ball,
However the procedure to use options in the Blackberry device differs from Option to Option.
Please write it to us the exact function which you want to use so that we can help you with the same in detail, as there multiple functions in Blackberry.
I haven't heard of an Internet-only plan on T-Mobile, as I don't think there is one. If you don't use a lot of minutes then I recommend the BlackBerry Minutes and Mail plan. It allows for 1000 Anytime Minutes, unlimited data (including Internet) and e-mai, and unlimited text messaging for $59.99
