i have been installing these kind of counter tops for years, there's a ton of stuff you can buy to seal, and protect your counter, one trick is to apply mop and glow to a dry counter let it dry and apply more coats.the good thing about mop & glow is you can remove easy, it works great.good luck
Contact the company on the bottle! I would also talk to the store manager there as well. The manufacture will give you the correct steps in removing the product. You could also contact an installer and get some ideas as what can be done to either fix it or remove it. Either way, be careful. Most people don't realize that granite can be damaged.
You can repair the sink with an epoxy based porcelin kit
Epoxy will not show brush streaks it will levelitself out do not get any kits from HD or Lowes they do not harden
Go to Sherwin Williams and ask for an epoxy paint for porcelin
As for removing the under counter sink I would try cutting through the caulk adhesive between the bottom of the granite and cast iron sink with a hack saw blade I have used a diamond blade on a grinder and cut through but it was not a granite counter top Be extremely areful to suport the underside of the sink with 2x4 blocks to prevent stressing the granite as you cut through Good luck
