read the user manual as the temp should be thermostat controlled were with gas there is always a pilot light burning when the oven is in use and when the set temp is reached the gas burner is shut off and when the temp fall below set point , the gas is turned on again and the pilot light starts the burner
by using the timer , when the time is reached the gas is turned off and of course you will have to relight it
if you do not have a user manual , download one from google or talk with a gas repair shop

Check the thermostat, it may have a mechanical defect (not closing contacts once it reaches the cut-in temperature).
If the pilot flame goes out with the burner flame once the ste temp is reached, your fryer may have problem with the hi-limit (premature tripping).

Hi limit device trips prematurely (should only trip when oil temp reaches 450F). Check if the hi limit sensing bulb (located inside the fryer tank, between fire tubes) is not touching the fire tube because if it does, it will sense the heat from burner flame which is much higher than oil temp.
Set the thermostat to 350 degrees,get a thermometer and put it in the oil,when the unit shuts off look at the temp of the oil.If the temp of the oil is higher then the thermostat is bad if not the hi-limit may be.Let me know.
try to change the thermal battery the device that the pilot heats.. other wise there is a screw at the botton of the automatic valve.. try to increase the pilot so it can heat more the thermal battery! u dont have enough voltage to activate the solenoid valve so thats why ur pilot goes off
