If this is "side by side" make sure that you haven't blocked the vents between the freezer and the refrigerator compartments with too much food. The refrigerator compartment is totally dependent on cold air from the freezer and if those vents are blocked, odd things begin to happen. Hope the solution is this simple.
Your water filter is located underneath the freezer door, in the toe plate grille. you will see a knob, turn it counter clockwise one quarter turn. Sometimes its easier if you remove the toe plate grill first. Remove the filter from the housing, then remove the knob from the filter, place the knob on the new filter, remove the red cap on the other end, and with the "handle" of the knob pointing up and down, insert the filter, and twist it clockwise one quarter turn. Replace the toe grill if you removed it
I was going to suggest that maybe it is a self defrost issue not shutting off when it should but sine you mentioned this knob, it suggests a thermostat out of calibration - I can rule out circuit problems since you can manually turn on compressor by turning the knob to a cooler position - you will need to have it serviced and change the thermostat which is not cycling whne it's supposed to.
ALSO - do not refreeze foods in your freezer that have thawed ! Throw them away !!! Normal freezer temps should not be warmer than 10F, the normal temps are 0F, and optimal recommended temp -10F (for hard ice cream) and to allow better recovery in case of power failures.

remove the grill at the bottom of the fridge there is a black box wth a knob sticking out you can turn in only one direction clockwise till you hear a click and the compressor and fan will cut off if running.
Have you ever cleaned the condenser coil in the back or under the bottom of the refrigerator. Dirty coil will cause this problem, also make sure the little fan motor in the back is working if it stops you can get the same condition. If not these two conditions you may be starting to have a refrigerant problem.
The unit gets low on refrigerant and just dosen't cool properly.
