It depends on the type of meat you want to smoke.
Some take longer than others. Example: Brisket verses a rack of Ribs.
There are many good books that get you started.
Hickory is a good wood to start with.

No, you're not missing any parts. What you see is what you get. There is a hole for a thermometer in the door, but for whatever reason, Brinkmann didn't include that with the smoker. To help you further, I have included a link to the Owner's Manual for your "discontinued" model smoker.

We have a brinkmann smoke 'n pit charcoal grill $ smoker- the manual says to cure it- how do we do this and for how long? :-)


By cuing, they mean burning it for an hour or 2, before using it to grill or smoke food. Coat the grill grates with a light coating of vegetable oil, before firing up the charcoal. Maintain a temperature of 325 - 350 degrees F for half an hour with the hood closed and a half hour with the hood raised.. After that, the grilling part of the grill - smoker should be cured. The smoker part, other than cleaning, doesn't need much curing. As the temps for smoking don't exceed 225 degrees F.

Need owners manual


As you are probably already aware, your model all-in-one grill/smoker has been discontinued by Brinman. However, that doesn't mean they don't still support it. To get a copy of your Owner's Manual, you'll need to call Brinkman's Customer Support Dept (800) 468-5252. They can either mail you one or email it to you as an attachment in pdf format, that you can download and print for future reference.

Note, this isn't EXACTLY your product. This is model 80525000, but it should be EXTREMELY close, close enough that they didn't feel the need to make another owner's manual for your exact product. You should be able to extrapolate any differences.

I own a brinkmann 810-3825-S and we are trying to smoke pork ribs. So is the lid supposed to be open or closed? And what causes it to be so smokey?


You will want the lid closed, the longer you can hold the heat/smoke in the better the flavor. What makes it smokey is wet wood chips on your coals, a smoker box works great for that but I think this model has it built in. You can get different wood types of wood chips at places where you can buy grills in the same department. You can usually get hickory, oak, cherry and such. Hope the ribs turn out good! :)
