Sounds like the pilot is dirty,if you have propane gas this is your issue,replace the pilot either way.

I had a simular problem. The gas company disassembled the pilot light and cleaned it. The fryer works perfect now.

Hi there, it sounds like your thermopile, for the pilot, is failing during use, when this happens, the small DC voltage it generates is less than the gas valve requires to stay open, and shuts off the pilot, which shuts off the main burners. Another thing that could be happening, is the hi limit is opening prematurely, instead of shutting of the pilot at 450 deg. it now is opening at 325, or 225 or 250. Sometimes the sensing bulb gets broken where it pass's through the oil tank causing this symptom. If you temporarily bypassed the hi limit to test this also, and it still goes off, you need a thermopile. If it stays on, check your temp with a reliable thermometer, and see if it reads fairly close to your setting, if so, then you need a hi limit.

If you don't know that you are doing you should buy them. You need one for each burner, 3 or 4 for most models. Yes they can be drilled out going only one way, using lettered drill bits that are hard to find. The regulator on the back normally has to be adjusted also. If either is wrong, the flame will be to big or to small to heat correctly. At least buy one orifice and check the size hole, they are not expensive $5 -$10 if you do a little searching for a good price.

The Part Numbers are:
Orifice - NAT. Gas 1625-36
Orifice - L.P. Gas 1625-51


You MUST use Lettered drill bits for size, Like A-Z If it was drilled with any normal size bits 1/16 type bits it will NOT be correct! There should be a number stamped on the orifice, unless it was drilled out. Most people never mark the door that the gas type was changed, causes all types of problems for the service men.
Can you give more details to your problems? I couldn't find the hole sizes right off, but have seen it listed.

It should be listed on the label unless it was changed at some point. The only way to tell is to use numbered drill bits to see what size hole is in each brass orfice of the burners, usually 3 to 5. The manual will list the orfice size for LP or NAT by the fryer BTU output. Most manuals can be found online, if you don't have a copy. This will require removing part of at least one burner to check the hole size. New orfices are normally about $20 each, most are marked on the side of the brass orfice. Note: some people drill out the holes to convert LP to NAT gas. Don't trust what is marked on the orfice, be sure to check with a drill bit. Small numbered bits can be hard to locate in most hardware stores. Found mine at Harbor Freight Tools.

Hi I use to repair every kind of restaurant equipment under the sun..maybe I can help...Is this a new install of the fryer and it never did this before, or did this just start do this..If a new install, the first thing I would check is the gas regulator and see if it is for Nat gas or Lp gas, and find that out..cause it has to match what you have, comming into the building..usuall the gas valve has a sticker on it that says what the water columbs are like for Nat it is like 3-6, and for Lp(propane) it is like 5-12. Ive seen customers buy a used fryer, and install a LP fryer in a Natural gas build, and the valve lets too much gas to the burners, and it will shoot flames out the top..then you would have to buy and convert a gas valve, or use parts to convert it..let me know further..

From natural gas to propane


Page 3 shows your conversion kit part numbers provided by PARTSTOWN

The pilot light has to be converted to LP. The burner orifices must be swapped out and the gas valve must be converted. from Nat to LP. Do your swap out and open your air shutters. Light it off and tweak the air as needed then party on!

I have purchase 2 used FMP 40BSS fryers - originally Nat Gas - i want to convert them to LP - what is needed and can i do it myself?


To convert these to LP you must downsize the burner orifices and the pilot orifice. Also you must change the regulator on the gas valve to LP. Easy job.

Visit http://www.middleby.com and go to PITCO web, you will be able to locate there the nearest authorized parts dealer on your area and ask for the conversion kit (from nat to lp). The gas valve conversion kit consists of spring, cap and instruction manual. you also need to replace the burner and pilot orifice, Nat pilot and burner orifice have larger bore than lp.

Change from natural gas to propane


1.You will need to change the pilot orifice and the burner orifices
2. You may need to change the gas control valve. Some gas control valves are made for natural gas and some are made for LP. They have regulators built-in, that deliver the correct pressure respectively. Natural gas is 3.5 inches of water column, LP is 10 inches of water column.
Some manufacturers sell kits to change the spring in the regulator from Nat to LP
You would need a parts breakdown on the specific model number of your fryer to find the parts you need. Hope this helps.
