How to sneak some healthy fruits and vegetables into your kids diet

I have a four year old who simply refuses to eat veggies.

Over the years I've learned a few tricks to sneak them into foods that he would otherwise assume are veg free.
For example, most weekends we make pizza at home. I make the sauce and I fill it with pureed cauliflower, zucchini and carrots. Not only do they add nutritional value to the sauce, they add a ton of flavor. Plus, my son has no idea!

Some nights, instead of making mashed potatoes I will mash cauliflower and maybe add a cool green swirl made from peas.

And now for my favorite way to add a little veg to my son's dinner! On taco night I mince mushrooms and black beans. I add them in with the ground beef and fry it up.

Before my son's pediatrician warned me about making sure he eats fruits and vegetables, I would give him the a nutrigrain bar or or one of those yogurt cups with "fruit" on the bottom. Instead, I give him low fat yogurt and cut up fresh apples, bananas, berries or whatever i have in the house. This is much more delicious and much healthier on all levels. Plus, it is zero hassle for me.

If I have a bit more time, usually on Sunday morning, I will make a batch of my own nutrigrain bars. They are an absolute cinch to make and my son loves them. Here is the recipe I use.

I recommend this book by Jessica Seinfeld (wife of Jerry), called "Deceptively Delicious." She lays out all sorts of yummy, interesting ways to enhance your kids' diet.

Im looking for a homemade meal replacement drink recipe. I am on a high protein, medium carbohydrate diet. What would you recommend?

I am on a similar diet as you and I use the following meal replacement recipe from time to time in order to support my nutritional needs. What I do is take about .5 liter of 1% or skim milk, one serving of my chocolate protein powder (I usually use Optimum Nutrition Whey Gold Standard), and half a cup of oats (Quaker) and put them in a blender. I mix them all and then have a delicious, nutritional meal replacement! It comes out to be around 450 calories with 45 grams of protein and 55 grams of carbs.

Homemade pumpkin pie spice mix

Have you ever wanted to make a recipe that calls for "pumpkin pie spice" but don't have it in your pantry? It turns out, pumpkin pie spice in made from things that most people already have so there's no need to go out and spend the money on another spice that's just going to sit on the shelf. Instead, you can make your own with stuff you probably already have lying around your spice rack.

Here is all you need to make your own pumpkin pie spice:
  • 4 tablespoons ground cinnamon
  • 2 tablespoons ground ginger
  • 3 teaspoons ground allspice
  • 3 teaspoons ground cloves
  • 1 1/2 teaspoons ground nutmeg

Take these ingredients and put them in a small mason jar or some tupperware and shake them up good.

You don't need to use exact measurements and can alter to your own taste. My kids hate the taste of ginger so I usually cut it by about half.

On a side note, pumpkin pie spice tastes great sprinkled on your morning coffee or over your late night scoop of vanilla ice cream!

I have family coming over this weekend. I want to make for them a delicious fruit salad; I am just not sure what fruits to put in. Can you recommend me what fruits to use?

The fruits I use in my fruit salad are: bananas, oranges, grapes, apples, pear, and pomegranate. My family always loves this combination of fruits!

Recipe didn't turn out ...

It sounds as if the temp was to high for a shorter period of time. Try cooking longer at a lower temperatur.
