They can be made from aluminim foil (disposable pans), stainless steel, coated enamel, cast iron, or clay.

You should not serve the marinade that you had the raw meat in unless you boil it for several minutes first, which is not a bad idea since it cooks it down to thicken it and concentrate the flavors. You can also add any meat juices in the bottom of the roasting pan to it. If you roast any onions in the pan with your roast, you can also add them and then blend them into the juices.

Should I cover my roasting pan or not?


when using a roasting pan, it depends on the type of meat and the recipe if you should cover the pan or not.
meat with a high fat content eg duck doesnt need to be covered.
lean cuts should be covered when roasted for a long time to keep the juices and soften the meat.

What is the difference between roasting pans and broilers?


Roasting pants are for big peicesof meat becuase they are big, deep pans so the meat will cook and be flavoured from its juice.
A broiler has shallow sides so the meat cooks faster. It also has a slotted bottom so the pan drains.

Leave the liner pan in it will help crisp/brown your meats ...it will also aid in clean up later...

Refer to page 6 for complete instructions.

You do not add water or anything below the roasting pan. You fill your roasting pan 1/2 to 3/4 full with water, place in the empty serving dishes, then preheat at 350 degrees until hot (about 1/2 hour).

Then fill the serving dishes and reduce heat to 250 degrees. You may need to adjust heat and more hot water if necessary.
