This is a metal square with a handle. It is used to change the dough shape or to clean the surface where the dough was. It is used to pick u the dough, turn it over, or separate the dough into pieces.

Easy egg &cba on pie


To make an easy egg &a bacon pie, cut a few slices of bacon,get some store bought puff pastry, grease a couple of desert bowls with butter, whip up 4 eggs at a time, line your bowls with the puff pastry, pour in the whipped eggs sprinkle in the bacon a little salt &pepper you can ad some torn up or shredded cheese then put a puff pastry lid on, couple of slits to allow steam to escape, oh & don't forget to wipe the rim with a little egg or milk before putting the lid on once the lid is on wipe with a little milk to get a golden brown, bung it in a medium oven around 180c then around 1/2 an our later each bowl will have a beautiful pie that will feed two. You may need a whole one for a big meal (man size) hope you enjoy?? I am a single man & I love these.

The Secret to Making Good Pastry


If you're not a massive baker, you probably get frightened at the thought of making your own pastry.
The ingredients of pastry are very basic. Flour, fat and water to bind it as a paste. But depending on the proportions of fat you use and how you incorporate it, will alter the kind of pastry you make.
If you are making short crust or puff pastry, you need to keep the pastry cool or it will be hard to work with. Handling pastry if it's very hot around or your hands are sweaty will not produce good results.
Pastry should be mixed quickly as it minimizes the gluten development. The more you work the pastry, the more the gluten gets activated and then pastry can become elastic and hard to roll.
The same applies to making pastry in the food processor - don't overwork it.
If you're making shortcrust pastry, put the dough in the fridge for 30 mins.

Here's a recipe for shortcrust pastry;
  • 7 oz plain flour or all purpose flour (see tip below)
  • Pinch of salt
  • 4 oz butter, cubed or an equal mix of butter and lard
  • 2-3 tbsp very cold water
Put the flour and butter in a clean bowl
Rub the butter into the flour using your fingertips until it resembles fine crumbs
Add the cold water to the mixture until it binds.
Wrap in cling film and put in the fridge for approx 30 mins.

My pork pie pastry seems quite hard after it has baked


Sounds like it was over-kneeded. This causes it to shrink and harden while baking (and cooling).

What makes a dessert a pastry?


The dictionary defines pastry as a sweet baked food made of dough, especially the shortened paste used for pie crust and the like.
and any item of food of which such dough forms an essential part, as a pie, tart, or napoleon.

I am very happy with my new smeg oven but no where in the oven manual does it say how to cook puff pastry for example a pie. I have a wall built in oven and have tried turbo and static function


Hello blachett989,

I belive they refer to puf pastry as Fruit Tarts under the sweeties label in the owners manual. As I do not know what model number oven you have I have looked at a few of the owners manuals on line. It states the different types of modes and temperature and approximate cook time for the pastry or tart as they refer to it.

We have recently purchased a Coopers halogen oven. I cooked a frozen fruit pie in it and the pastry looked beautiful, but when it was cut open the middle was cold and the pastry under the fruit not cooked....


Frozen food should be defrosted before cooking in halogen ovens.

Halogen ovens use only radiant heat and will not cook the centre of frozen food.
