I think wood is just fine for a cutting board, especially if you take care of it and treat it with a food safe mineral oil. Never put them in a dishwasher, only keep use mild soap and don't soak them in water. Dry them quickly and treat them often. Most cutlery companies suggest wood boards first, I know mine does, and I have Shun knives. Certain plastic boards would could ruin my knives.

I think plastic is the best. Wood harbors bacteria, glass ruins your knives. Plastic ones can be cleaned well and they even can go in the dishwasher.
