Question about Breadman TR520 Bread Maker

1 Answer

Bread Doesn't rise much / Brownie consistency

For some reason, every time I use my bread machine, the bread doesn't come out nice and fluffy, it comes out thick and heavy like a brownie. I followed the directions that came with the machine and use the ingredients it suggests and yet it still doesn't work. This was a gift from some good friends and I'd hate to have to put it up on ebay but i'm close to it. Any ideas?I thought maybe I was misreading the directions but then had a friend help me today and read the directions to me and we did it right all the way... tastes good, doesn't rise for squat.

Old yeast? Check the expiration date. Keep it in fridge or freezer between uses. Use the right type as called for. Some types won't do well in a machine and the loaves are paving stones.

Forget the white bread recipe in the Cuisinart book. There is an error in it. Is that the one you were trying to bake?

Bread does not rise

Make sure you are using the correct type of yeast. The old style active dry yeast is not as good. I recommend that you try Red Star Quick Rise Instant Dry yeast. Also be sure to store the yeast in the refrigerator. And, if you are not using a mix, try King Arthur Flour, it costs a bit more, but their tighter standards means you get more consistent results. They also have bakers who will answer your questions for free at 802-649-3717.

Dough doesn't rise

Yeast is likely too old, buy a new one and try again - if it works, toss out the old yeast. If the results are the same, your unit is bad. Is it getting warm/hot while operating?

My bread maker kneads twice just fine, and it bakes just fine, but the bread doesn't rise very high. All of my ingredients are fresh. I have tried several different recipes and it still doesn't rise in...

That is a difficult problem. One thing you might try to get a better rise in your machine is to cut the salt in your recipe by one half. It's healthier that way too. Please let me know the result.

The bread does not rise properly. The model# is BBCC-x20.All instructions are followed and yet the machine does not bake a consistent, even loaf.

Try a different flour. Make sure it is a Strong bread flour suitable for Bread machines. perhaps your packet of yeast is stale.

Bread comes out hard, dense, lump

I had a similar concern with a different breadmaker. Finally gave up and settled for a different setting and it seems to mix, and rise fine but have to settle for a different texture/hardness for the crust. I can only guess some computer chip has failed in that setting!

Dough not rising

Hi,
Are you using yeast that has not past it's expiry date? Using bread machine yeast that has not past it's expiry date will give you better results. I switched to the bread machine yeast and had much better results. Also make sure the ingredients are for the right size loaf. The ones that come with your breadmaker are made specificaly for your machine. Make sure you are choosing recipes that are in the same quantities for the bread cycle you are choosing. I hope this helps. I have included the link to the manual for your machine in case you don't have one.

Not rising and meally texture

Hello psaulina,

When I hear of bread not rising, I always suspect the yeast first.

You said you've used the hawaiian bread mix multiple times. From the same container? Or have you tried multiple different packages (hopefully from different production lots)?

Back in the day when my Mom was baking bread on a regular basis, she'd occasionally get a bad batch of yeast, and the bread would be the weight and consistency of fruitcake, but with somewhat less flavor. (We ate it anyway).

If your yeast is separate from the bread mix (don't know, you didn't specify), you need to first check the quality of your yeast. If the yeast is too old, or just bad, your bread won't rise.

To test the yeast, mix a sample in warm water (~105 deg. F) and add a little sugar. If the yeast is good, it should start forming bubbles. No bubbles, time to get new(er) yeast.

If your yeast checks-out, then you need to see if something in the machine's process is overheating the yeast too soon - - the yeast's fermentation process creates the carbon dioxide (CO2) bubbles that causes the bread to rise (sort of like inflating a balloon, if you like). If something is killing the yeast (e.g. too much heat too early in the process), it won't react and create the bubbles.

If I can be of further assistance, let me know. If this helps or solves the issue, please rate it accordingly.

Good luck, and thanks in-advance for your rating,

Jon
