As long as you are not making industrial sized batches, most muffin recipes can be done without of a mixer because it is mostly dry ingredients and the wet ones are easy to fold in.

a "cup" is just an approximate cooking measure. Actually depends if you like it more or less sweet but for your orientation, it's about 85 grams

How do you make buttermilk


Butter milk is 'usually' what remains when full milk (3%bf) or cream (10%bf) has been agitated to release its butter fat (bf). But if you are trying to 'substitute' a small amount in a recipe, say for muffins or coffee cake -- then adding a tsp. or so of lemon or vinegar to whole milk will do -- or diluting some real yogurt with water or milk, to the quantity the recipe requires.

You can knead longer than that, but you run the risk of over heating the mixer because at that point the dough is very firm. Your best bet is to knead it by hand.
