I actually think that carbon steel woks are the best type. They are not expensive and they conduct the heat really evenly.

In my opinion carbon steel is the very best if you keep it seasoned. Non-stick will start flaking off over 400 degrees.

I have brought my wok over from the UK but i have lost the electric lead firstly where can i buy one from and secondly will it be compatable with my appliance

Firstly is the WOK 220 Volt or 110 volt which is north American because if not 110 it will not work without serious house rewiring to provide you with a 220 volt outlet and then if you find a cord it will need to have the correct end for the 220 outlet you have wired in or you will have to have a compatible outlet to your cord.

How do i repair or purchase a bent wok burnerhead

Excessive heat is a problem with wok burners, pretty difficult to get them properly flat,you need to buy a new burner. They are pretty easy to fit.

Carbon steel woks are quite resilient so even if they get scraped with a wok ladel etc they tend to hold up well. They are also relatively cheap and so they make a good reliable option when you don't want to spend a lot on a wok.

Should I buy a round or flat bottomed wok?

That really depends what type of cooking range you have. Electric stoves need a flat bottomed wok for the heat to really distribute properly, whereas gas stoves can accommodate the more traditional round bottomed woks.

What is the secret to good wok food? It tastes so good in my local restaurant but just isnot the same when I try to re-create it.

I would say that the real key to good wok food is fresh ingredients. If you buy good quality vegetables and don't over cook them, and make good use of ginger and garlic, you are almost guaranteed to have a tasty wok meal at the end of it. Good luck.

I take it that since I see no answers here, there have been no answers, or by chance were the answers sent directly and therefore just not viewable here, as I too need a replacement cord for a Maxim 1600 Watt Professional Wok.
