How many inches should my wok be? I am only cooking for my family so it does not need to be huge?


don't be too confused by the woks in the shops and all the different sizes. An average family size wok is 14 inches. If you are making a dinner party, a 16 inch wok would probably be better.

Anyone got any wok cooking tips for me? I am starting to get really into Asian cooking and just bought myself a cheap wok at the supermarket but need to know how best to use it.


Good on you for branching out and trying new types of foods. Here is an article with some wok tips that might help you. The best thing is to experiment and figure out by trial and error what kind of seasonings you like to cook with. Just make sure you oil the wok properly and don't clean it afterwards with an abrasive sponge;

Are electric woks a good idea?


I don't think electric woks are good. The heat comes in surges and makes it harder for you to control the cooking process and also they are non-stick pans which creates a problem if you want to pre-heat the pan before you add the oil which is the traditional Chinese way of cooking but shouldn't be done with a non-stick pan.

What is the difference between cooking with a frying pan and using a wok to make stir fry.


A carbon-steel wok will give better results than a frying pan if you want to make a good stir fry. Not just from a taste point of view but also because it's much easier to flip the food around in a wok. In a frying pan it just shifts it to the other side and a key point of stir fry cooking is the movement.

Do you need to use oil when you are cooking in a wok?


Yes you do need some oil for wok cooking otherwise the food will just stick to the sides of the wok and burn. The secret is to pre-heat the wok before you add the oil. Then pour a bit of oil in and tip the wok around until you have coated the sides. Then you can add the food. Make sure that you stir constantly to avoid burning.

Cooking
chicken breast in a wok is a really good way of keeping the breast moist and
also cooking it in a lower fat way as you hardly need to oil the wok (as long
as it\'s a good wok that has been seasoned ie oiled before use properly).




You can
marinade the chicken in lemon juice, garlic and with any spices that you like
and then cook it in the wok on a high heat.
