Question about Panasonic SD-YD250 Bread Maker
The underlying problem is that the machine is bossy: it offers preset programs, but no manual override. I would like to be able to make my own decisions about kneading time, proving time and temperature, and baking time and temperature. But failing that, I can get quite a bit of extra flexibility by just knowing when it's going to start baking so that I can stop it, and fish the dough out to finish it as I choose.

The only thing you can do for these machines is the following:
first, if the unit is always plugged in, disconnect it for at least an hour. This may reset it.
I doubt there are parts...but if you disassemble the unit and cycle all of the connectors, you may get lucky. IF parts exist, you'll likely need a timer module.
