It is possible that the information on the disk is corrupted. This can happen during production though it is rare. If you have the NXE dashboard you can try copying the disk to the hard drive. It usually doesn't copy if the data on the disk is bad. If you have an Xbox live Silver account or above you can also get the latest update for the game, which may solve your problem.
Alternatively, try another copy of the game.
