I want to forward ports on my Modem-Router and can't because the tab for Virtual Servers is broken

In some cases, some setup wizard will not run at Mac OS. Maybe that's the problem that you have right now.
Regarding the incomplete menus when accessing it with Safari (I assumed) another way is to download Mozilla Firefox and try it there. This is just a suggestion that you can try. It works for me when I encountered this problem.
But incase that the menus are still incomplete with both Safari and Mozilla then it might be a firwmare issue with your device. Try and update it.

You need to open ports on the modem and forward to router ip adress ... then from the router open and forward to your computer ip adress

Have you checked the Windows Firewall settings? If it is On, try turning it off and attempt the connection with RealVNC. If the problem persists, try adding an Exception to the Windows Firewall, just as an added troubleshooting measure.
Click Start, navigate to Control Panel, double-click Windows Firewall, and open the Exceptions tab. Look for a RealVNC entry. If you don't see one, click the "Add Port" button, type RealVNC as the entry name, and 5900 as the port number. Select the TCP radio button, click OK and then OK once more. Attempt the RealVNC connection again.

Actually you don't need to forward ports when playing online games. The router should automatically locate the ports for the game because it has UPnP function. Here's what you can do. Disable the port forwarding and DMZ that you set on the router. Look for the UPnP function of the router and disable, Save it. Enable it again, then save. Now power cycle your router. If you have Static IP on the PS3 network settings, try to set it first to automatic IP and automatic DNS.
