Usually there are 3 screws in a row. The cord has 3 wires in a row.
Connect either outside wire to either outside screw. Connect center wire to center screw.

everything matches up from the old controller except the broil and bake relays l1b goes to com on broil purple goes to no on broil yellow goes to no on bake

The General Electric THQL two pole 100 amp double breaker?

It's coded HACR.
Heating, Air Conditioning, and Refrigeration equipment.
Means it can be used with electric motors. Electric motors draw a surge of electricity to start.

The UPC code will be for THAT style of breaker, and THAT manufacturer who made it.
Same with the EAN.
It will be on the breaker.

Let's use the Connecticut General Electric THQL 21100 100amp 2-pole breaker for an example;

Here you see it's UPC is 094925005165

If you are trying to purchase, or guide someone remote from you, in buying a breaker that will fit their service panel, find out what service panel it is.
The Model Number.

This will tell you, or a representative that sells breakers, what General Electric style of breaker that is needed.

I'm unable to identify the negative and positive wires of an General Electric air conditioner which has blue and brown, and of course I know the green is for earth. I need help on how to connect these to...

This info almost gets me to feeling positive on the connections. Might see if you can have them send you or direct you to a matching wiring diagram. SOunds like you have 3 wires - blue, brown and green. SO on 240 the blue and brown would connect to the fuse or breaker and then the green would go to the ground bus bar

I have an electric stove that has 1 black, 1 red

Since 1996, the NEC has required that all stoves and dryers be wired with a 4 wire configuration; 2 hot wires (red/black - supplies 240 volts), the bare green ground wire and a white neutral wire. Before you do anything, review this article which speaks to the 3-wire/4-wire arrangement. Good luck!
