I wrote to Sunbeam customer service and received this response:
"Breadmaker
model 5890 has a 30-minute delay cycle on the Wheat setting. This
allows for a period at the beginning of the cycle to “soften” the
ingredients for better results. During the first 30 minutes, the
machine does not do anything."
Apparently, this is by design.

Sunbeam Bread Maker Set the menu and turned machine onto 2 (whole wheat setting) and dark crust but the machine will not knead. The timer ticks down minutes but the motor will not turn the lever at the bottom of the loaf pan.

What cycle would be best? I tried basic, but the loaf collapsed in the middle--all the way down to the paddle! I had to throw it out. Sad, as gluten free flours are expensive. I'd really like some guidance on this problem, as I don't much like the commercial gluten free bread that I must eat.
