Open Question

How does the Fleetwood Meat slicer sharpener work

Someone took the sharpener apart to clean it and now we can/t get it back together and mount it so that it works properly. It is an EF12 slicer, Could I get a picture or a schematic of the unit and installation instructions.

Hi, I have working on meat slicer my whole life and can help you.

What normally happens is this. The bearings in the knife hub (this is the unit that the knife attaches to and spins) is starting to fail.

The gear on the knife hub is made out of a fiberous material and the worm gear on the motor is made out of metal, so when the bearings start to fail and cause resitance in the hub, the metal motor gear starts to eat the fiber gear on the hub and eventually wears a big chuck out of it. Then the motor spins free and doesn't make contact with the hub gear.

How you can check if this is the problem is this. You need to keep the power switch on machine in the off position and turn the blade a 1/4 of a revolution. Then turn the machine on, what should happen is that the blade will spin some and stop again.

The proper fix for the machine would be to rebuilt the knife bearing unit and replace the hub gear, motor gear and hardware.

In regards to the Chefmate. This is a design flaw of Globe and I told them about this when the machine first came out! The know is on a steel shaft that goes thru the aluminum body. The steel shaft starts to corode and also rust, then it freeze in the frame. What has to be done is this. This assembly needs to taken about sanded, lubed and put back together. The best way to permently fix this is have a machine shop machine the frame out and install a Oilite Bushing, these are impregnated with oil and it will never lock up again.

SOURCE: Berkel 827 sharpener not working properly

Your grinding stone stud is more than likely frozen try and lossen it up with a little penetrating oil take the sharpener off and work both stone back and forth untill they are both spinnig freely and remember do not apply either sharpening wheel on the knife for more than 5 seconds at a time you can burn the wheel and then it will never get sharp

The stone that sharpens the back bevel is used for more time, but use grind for minimal amount of time, 30-40 seconds sounds extreme to me. The stone for the top surface of the blade is only pressed briefly to remove the slight burrs from sharpening on the back side of the blade.

The blade is wobbling on my Fleetwood meat slicer EF12 Slices look like waves.


check that the problem is not from the way the blade is mounted on the shaft
any thing between the blade and the backing hub of the shaft will make the blade wobble so check for burrs , bad fitting parts or the like at the blade center
new bearings , shaft and hub are new but is the hub on the shaft straight

Can't sharpen blade


1 of 2 problem exist, you need new stones, or the depth of your sharpener needs to be lowered to compensate for blade wear

We have a meat slicer with no manual and no brand name anywhere on it! The only information on it is a plate at the back that says "MATR 32, TYPE 220M" My husband can't figure out how to...


Hi if he has to remove it , never heard of someone removing a blade to clean it , he needs to use a inpact screw driver with a hamer, I see so many louse fingers not knowing what they are doing

This isn't recommended, meat tends to get in a lot of the nooks and crannies in a slicer machine. It's best to first unplug the machine, then take it a part in order to properly clean it. If your not sure how to take the machine apart, consult the user's manual for further understand how to do it. Once taken apart, some sort of stainless steal cleaner followed by a sanitizing soap should be used to clean it. Sanitizer is very important especially when dealing with meat products. Once a sanitizer is applied it is recommend that you let the slicer air dry for 4-6 hours before using it again to ensure the sanitizer has fully dissipated.
