Question about Maytag MBF2556KE (251 cu ft) Bottom Freezer Refrigerator
The fridge is set to coldest but the fridge will cool to 36oF but then it won't come on again until the fridge gets to 48oF. Food is spoiling. I check for ice accumulation by taking the back off but nothing was wrong. Freezer is working just fine and so is the ice maker. Do I need to change out the thermostat or the control panel. I don't know which to buy.

Check to see if you have frost on the back panel of your freezer in your fridge. If you do your coil is frozen over and you'll have to defrost your freezer. I just did mine cause mine wasn't cooling properly on my fridge side.

Your timer for the automatic defrost is defective. Replace it. If you thawed out the back of the freezer, this could be good for 3-7 days and it will freeze up again. I had the same trouble.

My friend you need a new circulation fan motor.
As you can see the diagram.
Your freezer do not need fan to be cold, but your refrigerator need a fan to deliver cool air into it.

I really believe your adaptive defrost located inside the fresh food compartment and inside the control panel is defective. It puts your refrigerator on a timely defrost and if defective this problem you listed in your post happens. Yes we may need to also check the defrost heater and defrost thermostat but with my experience with that type of Adaptive Defrost Control is famous for its failure.
ADAPTIVE DEFROST CONTROL Part Number 61005988 You can find it located on two of my websites. Some models like yours came with a Defrost Timer. Here I am going to give you a lot of information. Because of the leaking your defrost condensate drain is most likely the reason. All on the page below may not be for your situation and some refrigerators do this over a period of time and the the water has no were to go but the freezer during defrost.
