I use this printer to print pictures to put on cakes, so the "ink" is actually food coloring and the "paper" is actually a sheet of "edible" paper, but when I put in the tank - with the chip- the printer is saying the tank is not recognized. I do refill the tanks. Do the chips just eventually wear out and is this just a matter of getting a new chip?

If you refill the regular lexmark 100 ink cartridges, you will not be able to use it because there is a rfid chip that track the ink usage. you will need to buy the 100a type which will let you print if the ink level is empty. since you have refill the 100 ink cartridge, you can swap the 100a chip to your 100 cartridge.
I don't think that has anything to do with reaching the board of 5000 copies. Your cartridges have no chips on them or anything. You might actually have a problem with your black ink cartridge, as the printer is telling you. Remove the black cartridge, gently wipe the contacts with a dry cloth and put it back in. Hold the "resume" button (triangle in circle) for about 10 seconds to try and reset your cartridge. If none of that works, I suggest you buy a new black ink cartridge.
Ink level counter (program) didn't read actually ink at ink tank. Brand new cartridge ink level counter 100% (full), and ink 100% (about 10 ml). After may printing, ink will dry out, and ink level counter reach zero (ink out). Printer will not allow print anymore, even have refilled, because ink level read "ink out". For canon type, you just to release ink level counter, and counter just stop, but printer will allow to print. Press stop/reset button for about 30 second.
try to remove the cartridge from the printer and then try to print some docx,,, without the cartridge....
an error should say that the installed cartridge is not recognized...
just try to print thrice or more then put back the cartridge...

Head cleaning procedure consumes a lot of ink. Ink level counter run too. So, after some head cleaning ink level counter reach zero level (ink out/empty level). Ink tank can not use again even there are ink at tank actually, because chip reach zero level. Reset chip using hardware resetter and you can refill ink tank.
You need to clean the print head manually. Remove tanks from print head, then remove print head. Find a small tray you can put hot water in to the depth of a quarter inch / 6 mm. Soak bottom of print head. Do not touch or get wet the electrical contacts. Next while holding print head in left hand carefully pour a small amount of hot water in the each ink tank well in the print head. Now dab the bottom of the print head where the jets are with a paper towel. Keep dabbing till you get equal size spots of all the colours. Best to wear plastic gloves doing this.
Best to use battery water (de-ionized) but if you don't get scale in your electric jug your tap water is fine.
