Either your savegame got deleted or corrupted. If it still shows up in the main menu, I would suggest copying it to a flash drive and trying to start a new game. If you can make a new game then your savegame is corrupt and you cannot use it anymore. If it will not allow you to make a new save then chances are your Fable 2 disk has been scratched and can no longer be used.
I have this problem too. I have my xbox360 connect to an older rear projections Mitsubishi TV running 1080i resolution. The only thing I could do to get around this was reduce the xbox360 resolution to 480p. It looks ugly, but you can see the text. Anyone have a better solution?
I think i had a simular problem...my xbox broke down and i had to send it in and when i got my new one it didn't recognize the Halo 3 content didn't work so i had to go to the marketplace and redownload the content if you have already purchased it then it's free to redownload if this does not work go to the memory and fable 2 and delete the content and then redownload it just remember for fable 2 you have to to have the specific download that you downloaded
Because you shut down the console halfway during saving, your save game might be corrupted. Now, I don't remember much about Fable 2 but I think that it - unfortunately for you - only uses one save game which is probably corrupted now...
Since your Xbox is brand new, you can just install Fable 2 to the hard disk of your xbox 360. I didn't have this problem with Fable 2 - but that's maybe because I installed it to the HD from the start. Fallout 3 did freeze on me, but installing it to the HD fixed the issue. Don't get any ideas though, you still need to insert the disk if you want to play ;-)
This is how you do it:
Load the disk into your Xbox 360 console and go to your Xbox 360 console
Scroll down to My Xbox
Scroll across to Game Library and hit the A button
This should put you on the Recent Games window and your game should be highlighted, so you should just need to hit the A button. Otherwise, scroll to the Recent Games window and choose the game.
On the game screen, choose Install to Hard Drive. This process should take a few minutes, but once it is complete, you'll be able to enjoy improved performance.
You'll also note that the game screen contains all kinds of great information about the game such as the achievements unlocked and featured downloads available for the game.
