That pretty much sounds like a weak igniter thats causing your troubles, while the igniter first comes on to preheat the oven its seems to be ok,yet once it has been on for a while the igniter is getting weak and not allowing the gas to flow properly once its hot. By replacing the igniter the oven will maintain tempature.
The F10 indicates that the electronic oven control board senses a runaway temperature condition in the oven through the oven sensor circuit. This can be caused by a faulty oven temperature sensor probe or a failed electronic control board. Oven temperature is detected by the control board as it monitors the resistance through the oven temperature sensor circuit. You could have a failed oven temperature sensor, a wiring harness failure, an open thermal switch or a failed electronic oven control board that would cause this problem. The first component to check would normally be the oven temperature sensor probe. If you have a volt/ohm meter, you can shut off the breaker for the range and remove the screws that mount this sensor to the back wall of the oven. Carefully pull the wire harness into the oven cavity until you get to the wire harness disconnect plug. You should have enough slack to pull it this far into the oven. Disconnect the sensor but do not let the wire harness retract back through the back wall of the oven or it will be hard to reconnect. Measure the resistance of the oven temperature sensor with your volt/ohm meter. At room temperature, the resistance should measure around 1100 ohms. The resistance chart is shown in the image below.
If the resistance is above 2200 ohms at room temperature, then the sensor probe is causing the F10 error code and will need to be replaced.

If the resistance is normal, then one of the other causes mentioned above is producing your F10 code. You would need to access the electronic oven control board (Timer) in the console and check the resistance at the sensor circuit connection to the control board as the next step in troubleshooting this problem.
Is this oven gas or electric? If it is gas then it can be normal to see 30 to 50 degrees difference in tempature. The tempature in a gas oven works on the average tempature. For example: The oven tempature may rise all the way up to 370 degrees. Then the burner will shut off. And then the tempature can drop all the way to 330 degrees. Then take 330 and add that to 370 then divide that number by two and the average tempature will be 350. If your oven is electric then the tempature should be much more consistant but can have a 10 to 15 degree variance. Also the standard oven tempature guage that you put in the oven or even the temp guage built into the oven are not very accurate. We us a Fluke meter with a thermocouple to calibrate an oven. So to check your oven for proper tempature regulation you will first need to let the oven pre-heat for about 15 minutes. Then place the thermocouple in the center of the oven. If the oven is electric the take a temp reading every 5 minutes and average them out. If the oven is gas then you will need to take a temp reading when the tempature reaches it's highest and lowest points. Take at least 5 consectutive readings and average them out. You should get an average within 10 degrees of set temp(350 degrees). If it is off by 35 degrees or less you can usually caluibrate the thermostat back to proper temp. This procedure can be different for each range model. If it is more than 35 degrees off or you are getting irratic readings then the thermostat or thermostat components might need to be replaced.
Hello- Ignitors may 'light' yet not reach proper resistance and temperature, causing improper gas flow past valve. If resistance is below 4 ohms, ignitor is bad. Part is 40-75$ at local app. parts store. Fairly easy to replace. Hope this helps. -Thanks- ED
This is a normal function of your gas range. I own a similar model and it operates the same way. The gas is not required to be on continuously to maintain the oven temperature and will relight periodically when the internal temperature drops below the prescribed set level.
