For the Sansa Fuze, the selection Shuffle Mode is correct, just like you told:
In Main Menu > Music > Submenu > Music Options > Shuffle Mode:
1. Select Shuffle.
2. Use thumbwheel to choose Shuffle on or Shuffle off.
(to play songs in random order, set Shuffle to ON).
3. Press Select to change the Shuffle mode.
I'm not quite sure if the 2.1 firmware on the iPod touch has shake to shuffle if this setting is on every time the iPod moves it will shuffle to the next song I know for sure the 3.0 has this feature look through your setting see if thats the case

1. Reset the ipod using the utility 2. Run itunes application to create profile : after you have reset the Ipod just start itunes and it will ask you to provide a profile name, just provide any name and select okay.
