i had this exact problem. the reason mine wasn't working was because the security settings for my wireless router were set on wp2a and the xbox 360 can't pick this up. change your wireless router security to wpa and you should be fine...after i did this it saw my network and i was fine
You may need to foward ports and allow the router to talk to your xbox 360. I do not know the ports of the top of my head but when u get the error from your xbox 360 that it cant connect look into where it says ways to solve the problem. It should tell you the ports. Personaly I am wired and its way better. No lag and no problems.
Well with the hardware that the 360 sports you could do it with no problem. There is enough memory and processing power to do that. That said, there are no games that i know of that support this. Most of the games use Xbox live to complete the task that you describe. You could theoretically send the same video to both tvs from one xbox and make the image so large that only one half of the split screen could be seen on each of the TVs but that would take some serious tweaking and probably wouldnt be very pretty. You can however split the video and have two split screens on both tvs. Also I can think of no pratical way that you could include the other Xbox into that scenario (maybe a foot rest?) :)

try using WEP encryption, especially if you use a G router, as thid is easier for the adapter to work with then WPA. also make sure that you have the ports open for xbox Live, i think its ports 88 and 3074
