You better start simulation before writing the dvd's in the writing softwares... and hanging is not the problem by means of playing dvd's... try to play the same dvd's in some other system and then only you will come to a conclusion... Thanks...
If your DVD/CD drive was not doing this before, know that it is getting spoiled, especially on it's lens. Or the CDs and DVDs which don't play might be burnt on a higher speed which is not supported by drive. Try to use CDs and DVDs burnt at the speed recommended by the drive's manual, usually a maximum of x24 for CDs and x16 for DVDs.
grinding sounds is from the dvd drive itself. Sounds like its not sitting properly in the drive or the holder that it sits in is going bad.
Either way replace the drive and that will take care of the grinding sounds. Also the more grinding sounds that happen, the more of a chance you take on your dvds getting scratches on them and going bad eventually.

If it were the item you were trying to burn that causes the hanging, in other words a corrupt file, then that maybe the fault, but if it hangs with any other file your trying to burn, either your memory is being used up burning the files or you have a faulty burner, assuming you have tried different makes of dvd disks.
Unless you have a dual processor, it's not wise using the pc for anything else at the same time.
