SOURCE: Maytag oven not heating up
The igniter has failed. In many cases, even if the igniter is glowing, the resistance may not be low enough to turn on the gas valve.($50.00 to $90.00 for igniter). The igniter can get hot enough to raise the temperature 100 to 120 degrees without activating the gas valve.

The most common cause of this symptom is a defective ignitor. Oven
ignitors can glow and allow enough current through to open the oven gas
valve but just not produce enough heat to ignite the gas immediately
(see the link below).
In that case, replacing the oven ignitor is the usual solution.

No matter that the igniter glows you must measure the current... If the current is less than 3.2 or 3.6 you must change it (this current is for the igniters with rectangular white base). The current to open the valve is the same that passed through the igniter so if it doesn't reach the proper value it will never open (or sometimes open sometimes not).Mine is not opening and the current is 2.9 so I'm going to replace it tomorrow.

lots of those old elements are still out there...some come out with simple pull...or two screws holding the wires!.. take to appliance store (sometimes even lowes!)

SOURCE: Amana gas oven not working
The ignitor may be too weak to open the gas valve. If you have a volt/ohm meter capable of reading AMPS you can hook up to a ignitor wire and turn the oven ON. If you read less than 3.5 amps replace the ignitor. If 3.5 amps or more are read, replace the gas valve.
