Bread crust too hard

I have been using my new kenmore bread maker 100.12934 fr about 2 weeks. I am following the instruction manual recipes. Although breads taste good, even in light crust setting the crust is too hard.

    I'm looking for a solution to the same type problem. My bread is way overbaked. I made a 2lb load, set the machine on 1.5 lb and light crust and still took the bread out 34 min early

You can find a manual for your bread machine with these instructions:

  1. Go to www.searspartsdirect.com
  2. Next to "Find a part", click "Model #".
  3. Enter Model number 23848487 and click Search.
  4. It will say there are no parts available, but on the right side of the page, there is a "Get manuals for this model". Click "View manuals".
  5. That takes you to a site called Manage My Home. Register for an account, and you should be able to download the full Owner's manual.

Hi,
It's a misprint. It probably meant milliliters which is a metric measurement.

7 1/2 milliliters is about a 1 -1/2 teaspoons which is just about right.

How to choose a light crust for a loaf


It.s not so much the baking it's the length of time it takes. Your recipie may need modifying. Try a different recipe or use the dough setting and make your own bread that way.

My bread always comes out looking to dark


Your oven is probably getting hotter than the thermostat you set it for reads. The outside of the bread is probably getting done too quickly and by the time the center is, the crust is dried out. Try a lower setting and see if it works. And you may have to adjust the timing. Sounds like your oven needs a new element maybe.

Why is the crust on my bread hard? I follow the basic recipe to the letter. The bread is nice but I waste so much as I have to cut the crust off.


Replace the recipes that call for water with milk. Your bread will be softer and much lighter crust and will be healthier too. Be sure of course to choose light crust.

Breadmaker Model #100.12934 Crust to hard even on Light Crust setting after following the directions exactly. 3 trys and I am now ready to take it back.


If you are using water as your liquid phase in the recipe use milk instead (same amount)and you will have a lighter more delicate crust.

Lost my recipe book


Traditional White Bread (2 lb. loaf)
1 and 3/8 cups water
2 tblsp butter or marg.
1 and 3/4 tsp salt
4 cups bread flour
2 tblsp dry milk
2 tblsp sugar
2 and 1/4 tsp active dry yeast
Measure and add liquid ingredients to the bread pan
Measure and add dry ingredients (except yeast) to bread pan.
Use your finger to form a well (hole) in the flour where you will pour the yeast. Measure the yeast and carefully pour into the well.
Snap the baking pan into the breadmaker and close the lid.
Press "Select" button to choose the Basic setting.
Press the "Crust Color" button to choose light, medium or dark crust.
Press the "Start/Stop" button.

Hard crusts


I have an OSTER Breadmaker but if I wish a very light crust I simply turn the machine off 10-15 minutes early and leave the lid closed, which keeps the steam in and allows the crust to be softer. Then I have a new cold stick of margarine or butter, unwrapped part way, and slowly pass it over the top and sides of the new bread loaf. Sometimes due to weather changes or altitude we need to adjust our recipies, from those in our manuals. If your kitchen is 10-15 degrees warmer in the summer this can affect your machine. As with the amount of moisture in the air. My Gramma never made bread if it was rainy or a snow storm was brewing. The drop in air pressure made it uncertain if her bread would rise. Don't be afraid to fiddle with your recipe and adjust the amount of flour or kind of flour you use. Also have all ingredients at room temperature, for any recipe. Try various amounts of oil, water, an egg added, even if the recipe doesn't ask for one..! It is your bread and you get to eat it, it should be as you like it. The first adjustment is less time. Pull the plug early. Second would be the margarine. Third is play with the contents and adjust. Feed the birds the NOPES. Last reduce the amount of flour, but only by 3 tbsp at a time. This is the trick-y-est. Keep track on a paper and then re-write YOUR RECIPE on the inside front cover of your bread book.

My crust keeps burning


It seems like the strength of the heat/oven varies a lot from a machine to another... Mine works great with most recipes, but my parents' burns the crust everytime. The only adivce I can give you is to check on the baking process and stop your machine when the bread has a golden crust. It doesn't solve the problem, but at least you get your bread...

Instruction Manual


go to hillbillyhousewife.com and they have instructions for bread machines. I have used 3 different models of breadmachines and they work about the same. The site also has recipes. I use this recipe most of the time for fast bread that takes one hour for the Toastmaster TBR15.

I cup plus one tablespoon warm water - I use warm water from the tap but you can use a cooking thermometer if you like.
2 tbs oil
2 tbs sugar
1 tsp salt
3 cups white flour OR 1 1/2 cups white and brown flour
1 tbs yeast
Adding glutein will make the bread have a smoother texture. Follow the directions on the box.

Add ingredients in order.

Program breadmachine to fast bake and let it go. You will have fresh baked bread in an hour.
