I have a WX7 and a WX5 and they both have wind sensitivity trim pots on them. If the pot is turned up too much, the instrument senses that as a continuous note On signal.

Cannot play staccato, there is latency

Consider joining the forum here:http://www.patchmanmusic.com/WindControllerLinks.html It sounds like it is a velocity setting problem but the solution should be in your manual. It may also be a setting in the sound module you are using.

How could I set up quarter tone in a precise way, that I could control with bend control of EWI?

Here is a good forum to join:http://www.patchmanmusic.com/forum/ Depending on what you are using for a sound module, I would recommend setting the pitch bend limit or range on the sound module to what you want and controlling that setting with whatever setting you have on the EWI. Read your manuals carefully and you should be able to do it.

Internal and external sounds at the same time

Without reading the manual, the easiest solution that occurs to me is to not use a cable between the audio out on the Ewi and the amp or mixer you are using. You can also set the main volume to zero. That setting does not affect the program volume.

EWI4000s only plays one note

Hello a_marechalro,

You can try to reset your instrument.
Turn off the EWI,
Press the LEVEL, FX, SETUP and TRANS buttons.
Then turn on the EWI.
This is a Factory reset.

I hope for You this is the solution.
Kind regards,
Fred Roubos.

Detuning of Akai EWI 4000s

Are you shure that you aren't touching the bend up plate with your right thumb? This isn't easy detected by sax players which are used to have a thumb rest at exactly the same spot where the bend up plate is. You might switch it off (see manual). With the bend up plate on you should aways use a tight strap which helps a bit to not touch the bend up plate accidentally. I'm still struggling with this occasionally.
