A gaggenau double covection oven is supposed to reach over 400, if it does not go over 250, then it is probably a faulty thermostat.
If the oven is ventilated (should be) check also if the fan is working.

Things to check- The screw in fuses, they are usually the 30 amp fuses for the oven. Next is the clock assembly, often these clocks will have the words "push for manual" or "turn for manual", this will put the clock back into the normal operating mode rather than the automatic mode. Next, you may have to remove the power and check for any burnt wires. If all checks ok, you will have to test the selector switch and oven control. Temperature is too low possible trouble makers, blown oven fuse, bake element is out, burnt wire, oven probe clips, oven temp control, oven temp sensor.
Temperature is too high in the oven possible trouble makers, oven temp control, oven relay ( if used ), oven probe clips, oven temp sensor, shorted wire.
These oven probe clips often rust off and the oven temp probe hangs down, or touches the oven wall giving false temperature readings to the oven control.

Hello Debbie - Sounds like the unit has loss some of its heat inside of the oven cavity. This means it cannot reach the proper preheat temperature in the programmed 30 minute timeframe. A technician would be required to further diagnose this concern. They would most likely assess the convection heating element, thermal cutout, thermal oven sensor and all wired connections for repairs. Lastly the oven cavity and insulation should be checked to ensure there are no gaps or damages that will leak out the heat. At t his time, I would recommend contacting a professional to assist you further.

Oven with convection - when baking cookies, cakes, etc they aren't getting done. Bottom and middle is soggy. Both coils look to be heating, convection fan is working.

Set the temperature one position higher. Convection ovens have a more even heat spread so if you used to bake at the top of your old oven it will now be slightly lower temperature

Oven shutdown

not sure about this one but it sounds like there may be a door switch on your model which is either a probe that the door hits off or it is a micro switch in the side of the oven that the hinge is supposed to strike off.look for these switches to see if connection is being made.
