My bread ALWAYS sinks in the middle

I stopped using my machine several years ago because I couldn't get bread that didn't sink in the middle. I used packaged mixes but the same thing happened to them all. I had started by using the delayed feature, then tried just the regular method. Nothing worked.

Today, I got the machine out and used a packaged mix. I just looked in the window and it is still hollow in the center.

I didn't lift the lid while it was rising or baking.

Internal mechanism failure .may be needs resetting and cleaning immensly to all the parts.

The bread doesn't rise properly, it sort of sinks in the middle. This is the same recipe we've used for years successfully. Could the machine just be broken?


Is this the same machine you have been using all this time? Or, is this an old recipe that worked in your previous machine but doesn't work in your Cuisinart? If you have moved from one location such as Florida to Colorado, elevation changes like that can make a difference in bread rising properly. If nothing has changed and now your bread doesn't rise properly then try using 1 tablespoon less liquid. If that doesn't work try 2 tablespoons less liquid and 1/2 teaspoon extra yeast.

When I make a 3lb loaf of basic white bread and the loafs don't seem to rise at the top and it's like the bread just sinks in the middle


Next time follow the same recipe but remove 2 TBSP of liquid from your measuring cup before putting it in the pan

I can only get premixed mixes to work in mt bread machine, when I try measuring everything the top sinks in alittle, Iam using fast active yeast bread flour and everything else at room temp unless...


If you have a bread machine recipe book follow it carefully. Look at your owner manual and read the part carefully about how your dough ball should look after about 5 minutes of kneading. If the top is sinking that usually means you need to use a little less liquid.

A kind lady gave me a new Toastmaster bread machine 4 or 5 years ago, but my life was such that I thanked her, but said I didn't have time to devote to it. A year ago, I took it out and used it twice...


If you chose the "dough" program it won't get hot at all. If you chose the other programs and it never got hot then you do have a problem. Please advise which program you chose and we'll go from there.

I have a sunbeam breadmaker model SUN0091. No matter what program I use or what recipe I follow in the manual the bread loaf does not dome on the top whenj cooked, but sinks in slightly. It is cooked, but...


Normally if that happens you have not enough salt. Try to add a little more, and see what happens. Also I am using exactly the same machine. The same thing happened with me too. I lost interest in bread making, and the machine ended up on a shelf for more that a year. When I started to use it again, and couldn't find the manual (blessing in disguise). I started to use recipes downloaded from the internet, and my breadmaker is now working for me on a daily basis. Check out allrecipes.com, you won't regret it. Oh yea, unlike what you might have read in your manual, I started to activate my yeast first - on all recipes! I mix my dry yeast with the sugar, and add the water raised to a temp of 38 degrees C to it. I let it rest for about 10 to 15 minutes. I then add the yeast water to the bread pan, and then the rest of my mixture. Just take care, I had to reduce my yeast because it was working so well. Your bread will come out flufier and raise higher

Are you using Strong bread flour? You may be using a poor quality flour. All pyrpose flour is not suitable for bread.
Too much liquid or yeast will also cause bread to sink

Hi,

Most bread machine manuals include a wealth of information about how to use the models so that they work at their best and produce great loaves of bread. Many manuals also have a troubleshooting section near the end. Before you contact customer service or attempt to take apart your machine, read the manual completely and try restoring your machine to its original settings, testing it again, and finally trying the repair ideas offered in the troubleshooting section.

If you've misplaced your manual, you may be able to find a down loadable copy on the manufacturer's website.

If the problems you're having relate to your finished loaves of bread rather than to your bread machine itself, you might be able to solve them by experimenting with the machine's settings or the ingredients in your bread. For example, expired yeast could result in a loaf that doesn't rise, and especially warm weather could mean a loaf that will sink in the middle.

Play around with ingredient amounts and types to see if your loaves improve when you use certain combination or settings. You can also experiment with the machine itself, disassembling its parts and putting it together again after you attempt to locate the problem.

If your bread machine is still under warranty, customer service representatives from the manufacturing company should be able to offer you online or telephone assistance. If you're not able to resolve the issue over the phone, you may be able to send your machine back to the manufacturer for free or low-cost repairs.


Even if you don't have a warranty for your machine, you can still contact the manufacturer for troubleshooting assistance and repairs, although you may have to pay a fee. You can also search for appliance-repair centers in your area and check to see if any of them handle bread machines.

Bread does not rise


  • Make sure it is good quality Strong White Flour (not plain flour)
  • The amount of water you use is very important. Use scales for accurate results - 1ML = 1G for water
  • Make sure the yeast is as per instructions regards type/quantity/quality.
  • Double check that you are running the correct program.
  • Always put the yeast in first, as you dont want the water in contact with water
Having failed that I would return the machine

Bread Rises Beautifully - then sinks in middle during bake cycle


Sinking in the middle means that there was too much rising for the amount of structure in the bread.
Usual causes:
-too much yeast (reduce 1/2 tsp.)
-too much sugar (reduce 1/2 tsp.)
-not enough salt (increase 1/4 tsp.)
-too much water (reduce 1 tbsp)
Another possible remedy: use "best for bread" flour, it has more gluten, or add gluten separately, 1 tbsp.

Start with reducing amount of water.
